Crystal Salt: Use salt made by dissolving and refining natural sun-dried salt, then crystallizing and dehydrating it. (Salt granules are nearly clear and transparent.)

Rock Salt: Salt extracted from underground rock salt veins formed from ancient seabeds that dried up. Low moisture content; granules are clear and transparent.

Natural Sun-Dried Salt: Salt dried by sun and wind in salt fields contains high moisture and cannot be used in stainless steel salt mills. (Salt granules are milky white.)

Sun-Dried Salt (Boiled Salt): Salt made by sun-drying seawater and boiling it in a kettle to form granules. Salt that has not been sufficiently dehydrated contains moisture and cannot be used in stainless steel salt mills. (Salt granules are milky white.)

Pink Rock Salt — Not recommended; grains typically larger than the specified 2–5mm range.

Peugeot Salt Mill — Usage Instructions

Peugeot salt mills are made of stainless steel. The stainless outer and inner blades grind salt together. The top screw adjusts grind from fine powder to coarse.

Grind coarseness is adjustable to suit your dish. For crystal salt only. (Not suitable for sun-dried salt, sea salt, or moist salt.)
